LONDON DRY GIN

The oils and flavours of all the botanicals are married together to give a clean crisp and fresh taste - welcome to London Dry style Gin

COLOUR CHANGING PINK GIN

Our Dry, yet aromatic Rhubarb & Quince Gin, subtle yet fragrant with a fresh and light palette. Perfect for a summers day.

BARREL AGED OLD TOM GIN

A twist on a London dry with homegrown Rosemary and added sweetness, used in our recipe is local honey then its barrel aged in oak barrels.

Roundheads has a great citrus palette with notes of berries and herbs. Triple distilled to get a very smooth spirit on the tongue and to give maximum flavour.

Barrel Aged Spiced Rum

The Rum is distilled with a whole host of herbs, spices and citrus. From there we age the Rum in Oak for anything up to 2 months.

We use the Lord General Rum that we distil and age, but we then add Walnuts and Cocoa Nibs to the spirit and infuse for a further 2 weeks.

Get the right mix

Mixing liquors is both a science and an art, and at Fairfax Distillery, we celebrate the endless possibilities it offers. Whether you’re a beginner or a seasoned mixologist, our spirits are the perfect canvas to craft a wide range of drinks.

Raspberry Fizz

25ml Lord General Spiced Rum
10ml Elderflower Liqueur
4 Raspberries
Edible Glitter
Prosecco
Sprig of Mint

Taking the 4 Raspberries, add them to glass section of the Boston shaker and muddle, or no muddler is available use the back of a dessert spoon (it creates the same desired results) add the Elderflower Liqueur and the Lord General Rum add ice and shake. Using a hurricane style glass or a large wine glass fill half with ice, then pour the cocktail over the ice. Stir in a pinch of edible glitter then top up with prosecco. Add Mint and Raspberries to garnish.

Gin Basil Smash

40ml Black Tom Gin
20ml Freshly squeezed Lemon juice
15ml Sugar Stock Syrup
15 Fresh Basil leaves

Taking the Basil leaves from the storks, place 15 medium sized leaves and the Sugar stock syrup into the glass of the Boston shaker and muddled together, (muddle = using the end of a rolling pin if you don’t have a muddler, this method bruises the leaves and allows the colour and flavour to escape) once the colour has started to bleed out of the leaves the lemon juice and Black Tom Gin, mix together then add ice. Add lid then shake, remembering to let the frosting get halfway up the metal side of the shaker. Using crushed ice, half fill a tumbler style glass then pour your cocktail over the glass. Add extra basil leaves as the garnish and Enjoy!

Ashley & Kelly McCarthy are no strangers to the hospitality scene. Being owner operators of the very successful Ye Old Sun Inn, Colton for 20 years. Over that time accumulating numerous regional and national awards for service, cookery and of course using local commodities.
