Your session begins in our distilling room where we introduce you to Mary, our beautiful still, and from there we will talk you through the history of distilling and its various styles and methods including the process of how we gain our distinctive Fairfax taste.

You’ll then head into our Blending Room where we will explain and demonstrate how to taste our fantastic range of distillates. This is where the fun begins! The idea is you pick about a dozen of your favourite flavours from our collection of over 70, ranging from fruits, berries, flowers, spices, tropical fruits and herbs. And from these you create your own recipe for the three drinks you are going to create. We offer Gin, Rum and Vodka as a base spirit. Once you are happy with your newly created spirit, you then head over to the bar and pick your mixer of choice and a garnish to suit. From the 3 drinks that you create pick your favourite and we’ll help create a 70cl bottle of your unique recipe with a fully personalised label which you’ll get to take home. The experience also includes a selection of nibbles and light-bites served from the kitchen to ensure you’re feed as well as watered!
